Candied Sweet Potatoes Pimento Dip Dill Dip
Thanksgiving dinner just doesn't seem right without candied sweet potatoes and they're so easy to do.
For these you will need:
Just peel and slice the sweet potatoes in thick slices, about 1/2 inch thick and place in a baking dish. I prefer to use a glass baking dish or casserole dish for these. Sprinkle the brown sugar over the top of the sweet potatoes. Cut up the butter in slices over the top. Put just a little water in the bottom of the pan so the sweet potatoes won't scorch and cover with aluminum foil or the casserole dish lid.
Bake the sweet potatoes at 350°F until they're fork tender. This will take about an hour or so depending on how big the sweet potatoes are.
When the potatoes are tender remove from the oven and top them with the marshmallows. Pop them back in the oven just long enough for the marshmallows to melt and begin to brown. Remove from the oven and serve.
I also do a cream-cheese pimento dip and also stuff celery with it. It's very simple and good. I just take 8 oz. of cream cheese and whip it with a small jar of diced pimentos. It's very good for stuffing celery and as a dip for raw vegetables and snack crackers.
Another dish I always do when I'm making a big holiday meal is Dill Dip. I think half the people in the world have this recipe but just in case you don't I'll give it to you.
The ingredients are: Simply mix all of these ingredients. Because the spices are dried it does need to set for at least an hour or two before serving so the spices can rehydrate. However, this is also one of those things you can make the day before and it will be even better.
The beau monde is a spice blend that is distributed by Spice Island and several different companies make a version that's pretty much the same. The Schnucks chain has one they call beau mondo. You really do need to find one of those to make the dip taste right.
This dip is delicious with raw vegetables and also with snack crackers and chips. It's great to have for those folks that are trying to go a little lighter through the holidays too as they can eat the raw vegetables with it. You can also serve a light ranch dip alongside the raw vegetables for your dieting friends.
Another thing I like to do is get a loaf of King's Hawaiian bread. It's a good sweet, soft bread we get here that's just great so I hope you can find it.
If you can't find it you can make a double batch of the Honey-Wheat bread and make half of it into a round loaf in a pie plate or round cake pan.
It's in a round loaf so I just cut the bread out of the center to make a bread bowl. Then I cut the bread from the center into cubes for dipping. Just before I serve it I put the dip in the center of the bread bowl and serve the extra bread cubes on the side for dipping.
When you're preparing a big meal like this it's great to have those little grazing tidbits for you guests and family to enjoy while you're finishing up dinner. Chances are when you're preparing a meal like this you won't get it on the table exactly when you planned, especially if you're not used to preparing large meals. So if you have some tidbits for your guests to much on you can take your time and enjoy visiting with your guests and family while you're finishing up the meal.
Dill Dip 1 cup sour cream 1 cup Hellmann's mayonnaise 1 Tbsp onion flakes 1 Tbsp parsley flakes 1 tsp dried dill weed 1 tsp beau monde raw veggies for dipping, snack crackers and/or a round bread loaf (King's Hawiian bread if best)
