Pineapple-Cottage Cheese Salad Pineapple Salad
Another dish I like to make with ham is Pineapple-Cottage Cheese Salad. It's very easy, keeps well and is quite good with baked ham.
You'll need: 1 can crushed pineapple, drained 1 large carton cottage cheese 1 pkg red jello (I like raspberry) 1 carton whipped topping
Drain the crushed pineapple very well in a colander. I usually let it set for awhile to drain while I'm mixing the other ingredients because you really want to get all of the juice out.
In a large bowl mix the cottage cheese and dry jello mix (don't dissolve it in water like you normally would...just add the mix to the cottage cheese dry from the box)
Add the crushed pineapple and stir.
Stir in enough whipped topping to bring the color out to a light pink and serve.
This will keep well in the refrigerator for at least 3-5 days.
Another fruit salad I often make that is quite good is the following Pineapple Salad. It's an especially easy one but is delicious.
You'll need:
Drain the pineapple and reserve the juice.
Mix flour and butter in a saucepan and cook for about a minute to make a roux.
Whisk in the salt, sugar and reserved pineapple juice. Cook on medium heat, stirring constantly, until it boils and thickens.
Cool then mix with pineapple and marshmallows and toss until coated.
